Quinoa and Amaranth are called “superfoods” because of their high nutritional values. Among the most ancient of foods, they were one of the basic foods of the Incas and the Aztecs and today they are used in astronauts’ diet.
Their protein content is of a better quality than that of traditional cereals such as corn, rice and wheat, thanks to the presence of essential amino acids such as lysine and methionine and they are also a source of fibre and minerals such as phosphorus and iron.
